INGREDIENTS:
- CABBAGE
- ½ cup of WALNIUTS
- ½ cup cooked BROWN or WHITE RICE
- ½ cup washed and drained CARBANZO BEANS
- ½ cup OATS
- ½ tea sp MARJORAM (green herb found in any grocery store)
- ¼ tea sp THYME
- ¼ tea sp ONION POWDER
- 1 table sp SOY SAUCE
- 1 table sp MUSTARD
- LEMON or lemon juice
- 1 cup TOMATO-VEGETABLE JUICE
- SALT & PEPPER
- small piece of BUTTER
Makes: 12 rolls of cabbage, will feed approximately 3-4 people
Prep time: 30 minutes
Cook time: 45-60 minutes
STEPS:

#1 Chop walnuts in a food possessor and set them a side in a large bowl where all the ingredients for stuffing will be combined.
#2 Rice and garbanzo beans should be processed next and added to walnuts.
#3 Oats, marjoram, thyme, onion powder, soy sauce and mustard: all get mixed in with walnuts, rice and beans into one firm paste looking like mash.
Preheat oven to 350 degrees
#4 Set a pan with water to high, in the mean time cut the leaves of the cabbage. The easiest way is to cut the center out, as it holds all the leaves together. Using a knife, carve around the center stem ¾ way to the bottom. The leaves will come right of when some pressure is applied to separate them.
#5 Here is a little trick I use so the cabbage so it is workable lol Cut the thick vein part off, just slice it to make a smooth surface, just like in the picture.
#6 Now boil the leaves for about 3-4 minutes, laying them inside the pan with a thick, vein side down so it gets a chance to cooks 1/3 way through. Then, pull the leaves out and let them cool down on a cutting board or a paper towel.
#7 Using an ice-cream scoop or a spoon make a nice oval or somewhat round shape ball of the stuffing mixture and lay it at the bottom of the leaf. Now give it a ½ roll and fold the leaves overlapping each other and roll the cabbage up. Repeat. The amount will be about 10-12 rolls, depending on the size. I would recommend making the cabbage rolls small ,so they cook through faster ;)
#8 Arrange the rolls on a butter greased pan and pour a mixture of tomato-vegetable & lemon juices with a hint of salt and pepper, over the top. If there are cabbage left over’s, chop them up and sprinkle on top and in between the rolls. Cook 45-50 minutes in the 350 oven.
This counts as a Vegetarian Stuffed Cabbage but it taste GREAT!!! I love vegetarian food, always try to make more of it and promise to share with you all. T00dles ;)
